Russet Potatoes (土豆)

Russet Potatoes are medium to large in size and have a long, cylindrical and elongated shape with a somewhat flattened appearance. The skin has fine light and dark brown areas and is russet, meaning it has a fine, sandpaper-like, rough outer texture. They are perfect for fried potatoes as their skin becomes crispy when cooked and their flesh absorbs butter and sour cream well.

STORAGE

Place the potatoes in a cardboard box, paper bag, net bag or basket to ensure adequate ventilation. In plastic bags they cannot ventilate and their shelf life is drastically shortened. So take them out of the plastic bag if you brought them home in one. Keep the potatoes in a cool, damp and dark place and never put them in the refrigerator.

Check your potatoes often and remove any limp, shrivelled or sprouted potatoes so that other potatoes do not spoil. Even if your potatoes have sprouted, they are still edible as long as they are firm to the touch and not wilted.
