Although Thai honey mangoes are smaller than other mango varieties, their seed is particularly thin and tiny. Therefore, the flesh to seed ratio is high. Thai Honey Mangoes are very aromatic and have a slightly wrinkled skin when fully ripe. They have a creamy texture and a bright golden colour, with an incredibly sweet, creamy honey flavour.

 

STORAGE

Unripe mangoes should be kept at room temperature since they will continue to mature at room temperature, becoming sweeter and softer. When ripe, mangoes should be refrigerated and may be stored in the refrigerator for up to five days. Mangoes may be peeled, chopped, and refrigerated for several days or frozen for up to six months in an airtight container.

Thai honey mangoes can be eaten raw or ripe. Raw Thai honey mangoes are peeled when they are still green, the flesh scraped off the stone and served with dipping sauces. They are also used to make pickles and preserves, which is a traditional Thai use for raw mangoes. Thai Honey Mangoes are often eaten when fully ripe. They can be pureed, dried and candied and then juiced for drinks when prepared for a heavenly and delicious dessert. For the famous Thai treat Khao Niaow Ma Muang, Thai mango with glutinous rice, the mangoes are simply chopped and added to a coconut cream sauce over the rice.
