Sugar Plum

The name of the sugar plum refers to its sugar concentration and its capacity to grow a high concentration of fermentation sugars, making them the perfect option for prunes production. The stone fruit is a large, elongated and typically has a powdery white bloom on its purplish-blue thin skin that encloses a firm but sweet flesh that contains a pit that can be easily removed.

STORAGE

Fully ripe sugar plums can be stored in the refrigerator for 3 to 5 days.

Although most sugar plums are dried to the plum stage, they are called multipurpose plums. They are excellent for eating fresh, using as desserts, making into jams and marmalades, or simply adding to sweet and savoury salads. Sweet flavours include vanilla, nutmeg, tropical fruit, chocolate, butter and citrus. Savoury combinations include light cream cheeses such as chèvre and ricotta; herbs such as arugula, chilies, fennel and basil; bacon, lamb and grilled seafood such as shrimp and scallops.
