Fresh Pomegranate

Fresh Pomegranates are about the size of an apple and have a deep magenta to bright ruby red, leathery skin. The inside of the fruit is densely filled with arils, which are actually seeds. Pomegranate seeds are the only edible part of the fruit. Each seed is encased in a transparent, bright crimson flesh that smells of cranberries, raspberries, red currants and grape concord aromas.

STORAGE

Pomegranates should be stored in the refrigerator. While whole pomegranates can be stored on the counter, they can be kept longer in the refrigerator. The seeds should be refrigerated in an airtight container after they have been removed from their protective covering. This prevents the pomegranate seeds from absorbing odours from the refrigerator.

FUN FACTS & TIPS

Pomegranate seeds are easy to remove by cutting the fruit into four or five pieces and submerging them in a large bowl of water. The edible seeds will sink while the white, inedible membrane floats and can be easily skimmed off. The seeds can be eaten raw as a snack or used in salads, relishes, garnishes or desserts. The juice is delicious pure, but can also be boiled down into pomegranate molasses or fermented into pomegranate vinegar. Cinnamon, cardamom, ginger, cloves, coconut, lemon, grapefruit, orange, apple, pear, honey, almonds, hazelnuts, curry, lamb, chicken and pork are all complementary flavours.
