Thai Lemongrass (柠檬草)

Lemongrass has a citrus and lemon flavour with a hint of mint that complements other flavours in a meal without overpowering them. Lemongrass has a pleasant fragrance that is good for drinks and dipping sauces. First cut off the spiky top and base, remove the first outer layers and throw them away. Then gently crush the lemongrass stalk with a large knife or cleaver to extract the most aroma.

STORAGE

Fresh lemongrass should be loosely wrapped in damp paper towels and stored the refrigerator for about 10 to 14 days. For longer-term storage, lemongrass can be frozen as whole stalks for up to 2 months.
