Rainier Cherries

Enjoy the firm, beautifully textured, creamy-yellow flesh and unusual golden hued skin with a crimson flush. The taste of Rainier cherries is distinctively sweet with overtones of peaches, low acidity and a caramel-like finish on the mouth as they are sweeter due to the higher brix (sugar) content.

STORAGE

Cherries will continue to ripen post-harvest so it is recommended to place unwashed cherries in a plastic bag and store in a refrigerator. When ready to  consume, wash them and let them rest until they get to room temperature to bring out their full taste. Fresh cherries may be frozen to increase their storage span, but they will only be usable for baking and juicing once frozen. Remember to remove the pit before to freezing or else the cherry will be imbued with an almond-like taste.

FUN FACTS & TIPS

They are more expensive than other cherry types since they only account for a small portion of the cherry harvest, and the cherries bruise easily, making export difficult. Rainier cherries are prone to minor skin darkening, slight scuffing, scarring, and dark spots on the skin. This isn't a flaw, but rather an extra-sweet sugar spot.
