Wakayama Kuroama (Black Sesame) Persimmons are freshly imported from Japan's Wakayama Prefecture's Kinokawa River. They are a unique and uncommon black flesh persimmon variety in which only 1% of the batch is chosen and only the best are carefully picked to be marketed under the name "Kuroama." They obtained its "black sesame-like" flesh from old tannin, which was produced by a specific growing method and was picked only when completely mature, resulting in a deeper sweetness and non-astringent fruit texture.
Japanese Persimmons, both ripe and unripe, may be stored in the refrigerator without washing. Unripe persimmons will mature slowly in the fridge, while ripe persimmons should be eaten within two days. The refrigerator will help to extend the shelf life of the fruit.
Japan, there is also a proverb that goes, "When the persimmon turns red, the doctor turns blue." There are fewer patients because of the season in which these fruits are eaten, prompting doctors to worry about losing their employment and hence developing pale faces. Similar to an apple a day keeps the doctor away, as the definition implies.
