Yellow Nectarine

Nectarines are similar to peaches but without the fuzzy skin. Although both white and gold nectarines is slightly acidic. Those who like yellow nectarines prefers a more complex character that is highly aromatic with additional subtle tartness and natural sweetness due to greater acid levels, whereas white nectarines might be bland but sweeter in taste. 

STORAGE

Hard nectarines may be stored on the counter, particularly if they are kept out of direct sunlight. They should be soft enough to eat in 1-3 days. If you don't want to eat them straight away, put them in the refrigerator after they're soft. Their flavour and texture will degrade after a few days.

FUN FACTS & TIPS

Nectarines should not be thrown out if they turn soft. This is an excellent time to make sorbet! Remove the pit and finely chop the fruit. Blend them with a few drops of lemon juice and maybe a teaspoon of honey in a blender. Puree until no major chunks remain, fill them into a container and freeze it.
